Check out the U.S. Census. The Hispanic and Asian categories are calculated for you. The Caribbean could be found by querying for a certain range of numbers which identify Puerto Rican, Cuban, Dominican, etc. You can talk to a Census expert by phone or through email as to which file would best suit your needs (http://www.census.gov/main/www/ask.html)
